A perennial herb grown for its large tap roots, plants grow vigorously from spring to autumn and will then die back over winter. Roots have a strong, pungent flavour and are used in condiments, sauces and pickles. The plant can also be grown as a nutrient cycler and to break up soil compaction.

Horseradish is a vigorous grower and will sprout from small root fragments.
